i tried it traditional ways and it was fine. i then started using an italia squisita recipe of bolling garlic in water then blending it with water and evoo in a blender then straining it. the blending creates a creamy emulsion of intense but not overpowering garlic. then just toss with pasta and its foolproof. I'll never make it any other way
