Gino D’Acampo’s final destination is Bologna, seen as Italy’s gastronomic capital. He makes his way to an unassuming trattoria to find a formidable chef who has been honing her bolognese sauce recipe for almost thirty years. After Gino devours the tasty sauce – mixed with hand-made tagliatelle – he heads up to the rooftops of Bologna to get cooking. Gino uses his grandfather’s recipe of tagliatelle alla bolognese – and lets us into some of the D’Acampo family’s secret sauce tips. After sampling mortadella, a hugely popular cured pork sausage, Gino visits a speciality shop in the city where two charming sisters teach him how to stuff the local pasta, tortellini. Back above the rooftops of the city, Gino creates his own stuffed pasta, an unusual dish of fried pasta half moons, filled with soft ricotta cheese, crunchy hazelnuts, orange zest and sweet chocolate chips.

  1. The rooftop he cooked on, is the rooftop bar of the Hotel Touring. I stayed there this summer and can recommend, both the Hotel and the bar. A funny coincidence that he cooked there.

  2. What a fake! Rhe real Bolognese sauce is made with tuna fish and not meat! The meat sauce is simply called ragu and usually not even eaten with spaghetti.

  5. O.K I used the original Bolognese with carrots also..aaand NO pork at all..hmmm not 2 much tomatos O.K…aaand please NO milk…

  6. The mixing of the tomato purée with water outside of the pot is a waste of time when you cook the sauce for a long time after. Not salting the pasta but the water also doesn’t make sense. I’m not saying these Italians can’t cook but I do think they have some silly little rules.

  9. How Italian. Gino goes to the birthplace of Bolognese, is explained why you should cook it a certain way. Then ignores the instructions. He used wine and didn't thin the tomato paste with water
