It was part of the cooking class we took in Florence Italy at Enoteca Vigna Nuova. We made tiramisu, fresh pasta (tagliatelle, pappardelle, tortelli), and Gnocchi. It was a fantastic class, with a small group, wine, good food, and a lot of fun. Chef Valentino and Gabriele were amazing.

Recipe for the fresh pasta dough is below:
PASTA FRESCA
Ingredients per 4 people
-250g Semolina flour
-50g Wheat Flour
3 eggs
Create your volcano with both kinds of flour and add the eggs, start stiring with a fork and continue with your hands.
Wrap and let the dough rest in the refrigerator for at least 20 Min.
