Anyone can make this pasta with stellar results. Inspired by “Pasta alla Norcina” from the Umbria region of Italy, this version skips using expensive hard-to-find Italian truffles so anyone anywhere can make it. And believe me, you won’t miss them because each perfectly creamy bite stands up all on its own.

I’ve used one of our favorite bronze drawn artisanal pastas made by Cav. Giuseppe Cocco and Italian Norcia salsiccia (a mild sausage made from the black-belted Cinta Senese pigs in Umbria), but you can find my easy every day recommended substitutions over at the blog.
