Zucchini Boats
by Faith and Flour
4 medium zucchini
1 lb ground beef
1 small onion, chopped
1 tbsp fresh or freeze dried basil
1 tsp garlic powder
2 cups mozzarella cheese, shredded (reserve 1 cup for topping)
1/4 cup catsup
salt & pepper to taste
Preheat oven to 350 degrees F. Cut zucchini in half by length, scoop out seeds and enough flesh to create a boat to hold the filling.
For the filling, mix the remaining ingredients and and 1 cup of the cheese. Fill each zucchini boat with the mixture and top with remaining cup of cheese. Bake uncovered for 45 minutes or until the cheese is golden. Enjoy!
