Linguine with scampi is a gem of Italian Cuisine
Italian pasta is an amazing dish – it can be anything. The variety of fillings is truly unlimited. This is my way of making linguine with scampi (langoustines) and prawns. Despite, linguine with prawns is a very simple to cook dish, it is taste amazingly and can be served in posh restaurants.
This is a quick guide how to cook linguine with scampi:

– Take 150g of linguine per person and as much as you like prawns and scampi, few cherry tomatoes, garlic, chilli and a lot of olive oil. Wine is also will be good.
– prawns should be deveined and scampi halved
– Preheat half of olive oil
– Add chopped garlic, chilli and salt
– Place scampi cut side down
– Add prawns heads
– Add cherry tomatoes and half parsley
– Fry 2 min and flip them over
– Splash some wine
– Fry 3-4 min more stirring every so often
– Add cooked linguine
– Splash of pasta liquid and olive oil
– Sprinkle with herbs again
– Nicely serve on a large plate
– Optionally: sprinkle with parmigiano cheese

This Linguine with scampi is an amazing example of Italian Cuisine, but to achieve better results, I do advise you to use best ingredients, and definitely choose bronze linguine.
