Bring a pot of salted water to a boil.
Remove the casings from the sausage and crumble into a hot cast iron skillet with a little bit of olive oil.
Boil pasta according to package instructions. I used a fresh rigatoni for mine.
Once the sausage is mostly browned, add in diced onion, salt, pepper, red pepper flakes, Italian seasoning, to taste. Deglaze with a splash of red wine and let it simmer down.
Add in sliced roasted red peppers and chopped artichokes.
Add in marinara or crushed tomatoes and let simmer until pasta is done.
Using a slotted spoon, remove pasta from the water, directly to the skillet with the sauce. Garnish with fresh parsley.
