My version of Italian Ragu’! Meaty, savory and overall delicious it’s one of the most loved Pasta condiments. The time it takes to make is definitely worth the result!
Like probably most Italians I have very dear memories tied to Ragu’. My Grandma Miriam was originally from Emilia Romagna where the traditional Ragu’ alla Bolognese is from.
The traditional recipe calls for Beef and Pancetta but I remember she would add Sausage Instead. Sadly I wasn’t able to ever ask for her Recipe before she passed away but hopefully one day I will get it to taste just like it did in my childhood!

Ingredients for 4 People:

Celery 50g
Carrot 50g
Onion 50g
Garlic, 2 cloves
Ground beef 300g
Sausage 150g*
White or red wine, half a glass
Tomato Paste, 1 small can or 1 squeeze tube (around 150-170g)
Water around 2 cups
Salt, pepper and sugar to taste
Juniper berries 20
Bay leaves and thyme
* if possible get a good sausage that doesn’t have too many spices or herbs added.

Preparation:

Cut by hand or blend the vegetables to make the mirepoix base.
Brown the vegetable cubes and the garlic and juniper in a big low pot.

When the vegetables are a little golden you can add the ground beef and let it brown nicely.
Once that’s done and the meat has a nice color use half of the wine to deglaze (the pot needs to be hot when you put the wine in), let it cook until the alcohol is evaporated and you can’t smell it anymore.
Take the meat out and repeat the whole process with the Sausage, deglaze deglaze deglaze!

Once that step is done you can put all the ingredients back together in the pot and add the tomato paste and after a few moments add the water and the Bouquet Garni. Bring back to a boil and let cook for a few hours (the longer the better). At the end of the cooking process add salt, pepper and if too sour a little bit of sugar.

Storing:

Once prepared you can either use it right away, store it in the fridge for up to 3 days or in the freezer for up to max 6 months.

Put it on Pasta, Gnocchi, Lasagne or even just on a piece of bread eheh.
