How to cook pasta with a green asparagus cream the Italian way:
Green asparagus is an extremely healthy and tasty vegetable, typically available from March-June. Combined with some Italian flavors – extra virgin olive oil, pine nuts and topped with salamino not only it develops a rich taste, it looks spectacular and is rather easy to prepare – if you follow the steps described in this video recipe.
Please note, the result will be very creamy, but without using any cream! It is a vegan dish, and can optionally be topped with some salamino (which I did), guanciale, pancetta or speck.
