Simple pleasures from Southern Italy- a “Frisa” is a twice- baked bread, which is cut in half using a thread after the initial baking, giving it it’s characteristic rough surface and then baked a second time until it becomes totally dehydrated. This makes it keep almost indefinitely, until you decide to use it… Then you rehydrate it briefly by dipping it in cold water. It is then topped with fresh ingredients like tomatoes, rucola etc and enjoyed as a light meal- especially in the Summer months. This was my first Frisa of the year- topped with rucola, mozzarella, cherry tomatoes, anchovy, capers, oregano & extra virgin olive oil… And here’s a really quick video to show you how convenient and easy they are to prepare… I really love them!
