Let’s get into this week’s semi-homemade meals that are vvv easy and vvv delicious, of course. Sometimes we just don’t feel like cooking, and that’s okay! Here are some dishes that will get you in and out of the kitchen in 15 minutes flat. Now, recipes:

// VEGGIE LOADED HUMMUS BOWLS
(4 Servings)

Ingredients
1 cup cooked rice (leftover takeout rice would be perfect!)
1 bell pepper, minced
2 persian cucumbers, minced
5-6 cherry tomatoes, minced
1/4 cup red onion, minced
1/4 cup Italian dressing of choice
1/4 cup herbs of choice, minced
Salt to taste
Store-bought hummus

Procedure
Mix all ingredients except the hummus together in a large bowl. Adjust with additional dressing or salt to taste. To each individual bowl, add 1/4 cup hummus and spread on the bottom of the bowl. Top with rice salad and optional garnishes like more herbs, cheese of choice, or perhaps a little yogurt.

// ZESTY TACO SALAD
(Serves 1)

Ingredients
1 can black beans, drained and rinsed
1/4 cup store-bought salsa of choice
1/2 head romaine, sliced
1/4 cup store-bought mixed veggie or slaw mix
1/4 cup pico de gallo (store bought, or homemade with 1 cup minced tomato, 2 Tbsp minced red onion, cilantro, lime juice, and salt)
Garnishes: additional cilantro, red minced red onion, lime wedges, tortilla chips, sour cream or yogurt, cheese of choice

Procedure
Mix together beans and salsa. Adjust to taste with salt or perhaps a little balsamic vinegar as necessary. Top romaine with a scoop of beans, store-bought veggie mix, pico de gallo, and garnishes of choice and enjoy.
