Prosciutto wrapped chicken with a herb ricotta filling.
Beautiful yet easy recipe that will make you feel like youβre dining at a 5 star restaurant. The perfect meal to serve for a nice weekend dinner at home or Valentineβs Day ππ
Ingredients ππ§π§π
*1/2 cup ricotta
*1/4 cup Parmesan Cheese
*1//4 cup fresh basil, chopped
*2 TBSP drained oil-packed sundried tomatoes, minced
*1 garlic clove, finely minced
*1 egg yolk (optional but helps the cheese filling from seeping out while cooking)
*Salt and pepper
*Two boneless skinless chicken breasts – butterflied
*5-6 slices of prosciutto
π₯Set smoker to 375F
π₯Mix together ricotta, parmesan, basil, sundried tomatoes, garlic, egg yolk and season with salt and pepper. Set aside
π₯Pat dry two chicken breasts and cut length wise careful without cutting through the other edge to create a βpocketβ for the ricotta filling.
π₯Add filling to each breast then season chicken well with salt and pepper. Wrap each breast with prosciutto (about 2-3 slices per depending on size) and place in cast iron pan.
π₯Put on smoker @greenmountaingrills (at 375F) and cook until breast internal temp reads 165F (will take about 18-20 minutes)
π₯Let stand for 5 minutes before serving and enjoy!
I served mine with extra basil and a side of rosemary flatbread and Caesar salad.
