red onion

Let’s get started

โ€ขBring a large saucepan of water to the boil with half tablespoon of salt for the pasta
โ€ขhalf peel and chop the red onion into small pieces
โ€ขhalve the pepper and discard the core and seeds chop into 3cm chunks

โ€ขcoarsely grate the carrot And grate the garlic

โ€ขHeat a drizzle of oil in a large frying pan on medium high heat when’s hot at the chicken mince and cook until browned, 4 – 5 minutes. break it up with the spoon as it cooks .

โ€ขonce Brown add Onion, carrot and pepper to the pan and continue to cook until the veggies are slightly soften 5-minutes
โ€ขstir in the garlic and Mexican style spice mix. Add less if you don’t like too much heat

โ€ขcook stirring for 1-minute add the chopped tomatoes, red wine stock paste( skip if u don’t have) and water for the sauce ,season with salt and pepper

โ€ขmeanwhile add breadcrumbs to the small bowel with the heart Italian style cheese and a drizzle of oil season with salt and pepper and mix well now

โ€ขonce the pasta is cooked drain in a colander and add to the chicken sauce

โ€ขmixed together then transferred to a ovenproof baking dish and sprinkle over the cheesy breadcrumbs

โ€ขbake on the top shelf of your oven until the top is Golden Brown 8 to 10 minutes

โ€ขonce ready leave the pasta bake to stand for a couple of minutes before serving the divide between your bowls
