In this video we show you how to make THE classic Apulian pasta: Orecchiette and how to cook them with Cima di Rapa (Turnip tops).

This food is one of the stars of the Southern Italian diet with nutrient rich, fat free, Cime di rapa and simple home made pasta.

As so often with really good quality Italian food it’s home cooking you _can’t_ find in restaurants as there is little margin for them.

The Durum wheat flour we use came from Mininni, a family run mill in Altamura – where “Pane di Altamura” – easily one of the best breads in the world is made. Altamura is on the edge of the National park of the Alta Murgia in Apulia – the largest area for the production of durum wheat in Italy.
