Hi everyone, it’s me Daisy and welcome to my channel. For today’s episode, I’m going to make some chicken gnocchi soup. It’s very delicious and comforting. It’s simple and easy to make with lots of veggies. You can use either fresh or leftover chicken. It’s great for cold or rainy days when you want something warm and comforting with lots of flavor. I think the whole family will enjoy it. So, what are we waiting for? Let’s get started!

Ingredients:
250 grams chicken breast fillet
250 grams gnocchi
600 ml chicken broth
250 ml cooking cream
1 tbsp cornstarch
½ medium onion- diced
1 small carrot – diced
1 stick celery – chopped
2 cloves garlic – minced
100 grams fresh spinach
2 tbsp olive oil
A few dashes of salt
½ tsp ground black pepper
½ tsp Italian seasoning
fresh grated parmesan cheese

Steps:
1. Trim the root ends of the spinach and set aside.
2. Peel the celery and carrots. Chop celery and dice carrot and set aside.
3. Peel the garlic and onion. Dice onion and mince the garlic. Set aside
4. Cut the chicken into bite size pieces and set aside.
5. In a small bowl, add cornstarch and a tablespoon of cooking cream. Mix it until it completely dissolves and there’s no lumps. Set aside.
6. Heat the pan on medium heat and add 1 tbsp olive oil. Add the Chicken and saute. Add a few dashes of salt and cook until it’s cooked through. Set aside.
7. With the same pan, add the remaining oil.
8. Add the onion, carrots and celery. Stir to mix.
9. Add the garlic and mix it. Saute until the onion is translucent but not brown.
10. Add the chicken broth. Cover and let it boil for 5 minutes.
11. Add Italian seasoning, pepper, and a few dashes of salt. Add the chicken. Stir to mix. Remember just add the salt if it’s necessary depending how salty your broth is.
12. Leave uncovered and let it simmer for 3 minutes.
13. Add cooking cream and cornstarch. Stir to mix. You can always adjust the measurement of the cornstarch if you want it to be thicker.
14. Cover and let it simmer for 2 minutes
15. Remove the lid and add the gnocchi. Cover and cook for 2 minutes or follow the instructions on your package. You will know if the gnocchi is cooked when it floats. Turn down the heat to low heat.
16. Add the spinach by batch. Let it wilt first before adding the next batch.
17. Transfer to a serving dish and garnish with parmesan cheese.
18. Serve and enjoy.
