It’s Chicken Parmesan without an oven! For years I’ve made this popular Italian-American comfort food dish in just a frying pan. This is how I manage to make one of my favorites from back home in my little kitchen in Japan.

Ingredients for 3-4 servings:

For the cutlets:
1 chicken breast
1 cup of panko bread crumbs*
1 egg
½ cup of flour
2 garlic cloves minced
Italian parsley chopped
Grated parmesan cheese

For the tomato sauce:
3 cans cut tomatoes
1 onion
3 cloves of garlic
1 cup of red wine
Red chili flakes (optional)
Basil
