How to cook Spaghetti Carbonara the original authentic way and obtain the perfect result.
Ingredients for 3 persons:
300 g of quality Italian spaghetti
6 egg yolks
90 g of Pecorino Romano
120 g of guanciale (smoked pork meat from the cheeks)
salt (optional)
black pepper (optional)
Spaghetti Carbonara is a cultural asset of Italian/Roman cuisine, and it is probably one of the most frequent reasons to start a fight with an Italian. So another good motivation for me to share with you the real one, the authentic one, the original recipe of a Spaghetti Carbonara.
In a previous video I did this recipe with pancetta (pork from the belly), and it was very delicious, but using pancetta it does not correspond 100% to the original recipe. So this time we will use guanciale (pork from the cheeks).
I guess we all agree that we do not add anything else than the above mentioned ingredients – if we want to do it the Italian way.
