Risotto (/rɪˈzɒtoʊ/, Italian: [riˈsɔtto, -ˈzɔt-], from riso meaning “rice”)[1] is a northern Italian rice dish cooked with broth until it reaches a creamy consistency. The broth can be derived from meat, fish, or vegetables. Many types of risotto contain butter, onion, white wine, and parmesan cheese. It is one of the most common ways of cooking rice in Italy.
Ingredients:
1 cup aborio rice
4 to 6 cups chicken broth boiled; keep it hot
2 garlic clove minced
1 shallot minced
200g cremini mushrooms (bed of caramelizes mushrooms not included)
2 tbsp chopped fresh parsley
1/4 cup white wine
1/3 cup parmesan cheese
2 tbsp butter
2 tbsp olive oil
salt and pepper to taste
Saute’ garlic, onions and mushrooms. Add wine then rice. Gradually add broth, stirring continuously . Add chopped parsley , parmesan cheese and butter halfway of cooking time . Cook for 20 to 25 minutes until al dente.
