Hey family!!! In today’s video I’m bringing y’all along for another Afternoon In The Kitchen! Today we’re making a Homemade Italian Cream Cake, PB&Js for the freezer, doing some fruit prep, and then we make Meatball Subs for supper!

Italian Cream Cake:
INGREDIENTS
FOR THE CAKE:
1 stick unsalted butter, softened
1/2 cup sugar
3 large eggs, separate
1 cup all-purpose flour
1/2 tsp baking soda
1/8 tsp salt
1/2 cup buttermilk
1/2 tsp vanilla extract
1/2 cup chopped pecans
1/2 cup flaked sweetened coconut
FOR THE CREAM CHEESE FROSTING:
1 stick unsalted butter, softened
1 8oz block cream cheese, softened
1 tsp vanilla
2-3 cups powdered sugar
Cream butter and cream cheese together. Add vanilla. Slowly add powdered sugar. Frost cakes when they are cooled completley.
