Ingredients

• 1 lb ground beef (80% fat)
• 1 lb sweet Italian sausage
• ½ – 1 lb ground veal
• 3 carrots – chopped
• 5 celery sticks – chopped
• 1 whole white onion – chopped
• 7-8 cloves garlic – chopped
• 1-1½ cup milk
• 1-1½ cup dry red wine
• 1-2 large cans San Marzano peeled tomatoes (depending upon if the sauce is to be more tomato-y and or meat-y)
• ½ small can tomato paste
• 1 bay leave
• Kosher sea salt
• Ground pepper
• Extra virgin olive oil
• Salted butter

• Bechamel Sauce – optional if want rich a creamier sauce

Directions

Heat 4-5 tbsp olive oil and 2-3 tbsp butter
Sauté onion till clear
Add garlic, but make sure not to brown
Add carrot and celery till tender
Add all meat, brown
Add milk and reduce down
Add wine and reduce down
Add tomatoes, tomato paste & bay leaf
Salt and pepper to taste
Simmer on low for 3-4 hours

Optional – add Bechamel sauce here
