This is Ivo’s version of the classic Italian “Beans and Greens” soup. He shares his special recipe and tips as well. It’s so easy to make, uses simple ingredients, and is full of amazing flavor!! Hope you enjoy it 🙂

Classic “Beans and Greens” – Ivo’s version
“an Italian classic comfort food”

Ingredients
• 4 ½ to 5 cups chicken broth (alternate, vegetable broth)
• 4 – 5 TBSP Extra Virgin Olive Oil (EVOO)
• 1 clove garlic, minced finely
• 1 head escarole lettuce, chopped into 1 – 2-inch pcs, washed thoroughly
• 1 can Cannellini or Romano beans (540 ml or 19 oz can or slightly larger is o.k. as well) drained, but not rinsed
• 1 pc. Parmigiano-Reggiano cheese or cheese rind (i.e. parmigiano cheese) approx. 1 oz (or more)
• Grated parmigiano cheese to taste
• Salt & black pepper, to taste

Direction and Method
• Add EVOO & garlic to a medium size pot, cook for 60 seconds
• Add escarole to your pot, and sauté until all wilted and soft, about 5 minutes (occasionally tossing with the EVOO and garlic, while it is cooking down)
• Add chicken broth, beans, 1 pc Parmigiano-Reggiano cheese, salt and pepper. Stir together and bring to a boil
• Once it comes to a boil, then lower heat to low, and simmer for 5 – 10 minutes
• Serve hot and sprinkle grated parmigiano cheese to taste
• Enjoy (great served with fresh Italian bread – or just enjoyed on its own) 😊
