I had chicken in the fridge and didn’t know what to do with it! So I looked on my trusty Pinterest “food and drinks” board and saw a recipe for Italian chicken sandwiches! I just had to run to the store for a few inexpensive ingredients and we’ll have a really tasty dinner tonight!

Italian chicken sandwiches (makes enough for about 4 people):

You need:
3 chicken breasts (thawed or frozen, but obviously frozen takes a couple more hours to cook)
1 – 24oz jar of pasta sauce
1 – 8 count bag of sandwich buns (I used potato)
1 – Package (8 Slices) mozzarella cheese

Place chicken and the entire jar of pasta sauce in the Crock-Pot and put it on the 8hr setting (medium low) for 2.5 to 3 hours (until cooked through and you can easily shred the chicken.

Once chicken is thoroughly cooked, shred it up and leave it in the sauce. Heat a couple of tablespoons of butter in a large skillet and place the sandwich buns cut side down I’m the melted butter. Toast for a few minutes until golden brown on the bottom. Place chicken and some extra sauce onto the buns and cover the chicken with cheese. If you want the cheese to really melt before you put the tops on the sandwiches, you can place the buns with the chicken and cheese on them in the skillet and cover them for a couple of minutes so the cheese melts evenly. Serve with a salad and enjoy!
