This video marks the last of our delicious Italian themed series. Now you can create a tasty Cannoli Cupcake dessert to bookend the impressive meal you can make your friends and family.

CANNOLI CUPCAKES
– Ingredients
1 box vanilla cake mix
16 oz whole milk ricotta cheese
8 oz cream cheese, room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup mini chocolate chips

CHOCOLATE DIP
– Ingredients
1 cup dark chocolate chips
1 1/2 tablespoons coconut oil, shortening, or canola oil

INSTRUCTIONS
Preheat the oven to 350°

Prepare cake mix according to box directions

Line muffin pan with paper liners

Fill 3/4 of the way up with a cupcake batter

Bake cupcakes for recommended time

Allow the cupcakes to cool completely

In a large bowl, mix ricotta cheese, cream cheese, powdered sugar, and vanilla

Mix until well combined

Fold in the mini chocolate chips

Scoop out center of each cupcake (don’t go all the way to the bottom!)

Add cannoli cream to a pastry bag or plastic bag (see video) and fill each cupcake with the cannoli cream swirling the cream around the top.

Place the cupcakes in the freezer for about 1 hour or until firm

While cupcakes are chilling, melt the chocolate chips with the oil until smooth. Allow to cool.

Dip the top of the cupcakes into the melted chocolate, admire it for a second, then MANGIA!
