Ham & Bean Soup
Ingredients
a ham bone with any leftover meat left on it
2 TBSP extra virgin olive oil
4 cups water
6 cups chicken stock
2 packages of mixed beans for soup
1 large yellow, white or sweet onion, chopped
4 cloves garlic, minced
14.5 oz can of diced tomatoes
2 bay leaves
2 tablespoon Italian seasoning
2 TBSP salt
1 tsp pepper

Instructions

Soak the beans overnight (or first thing in the morning if you are making later in the day)
Drain them and rinse them off

In a large pot, sauté the onions & garlic in olive oil until tender.

Add the water, the ham bone, and beans, bring to a boil, then reduce to simmer.

Stir in the diced tomatoes, spices and bay leaves.

Simmer for about 2 hours, uncovered, stirring occasionally.

You can continue to simmer if depending on how thin or thick you prefer.

Remove the ham bone and break apart any large chunks of ham into the soup.
