Italian Beef slow cooker recipe:
4lb boneless beef chuck
2 tsp sal
1 tsp pepper
2 TBSP olive oil
12 oz. pepperoncini peppers
2 cups beef stock
1/2 large onion chopped
5 large cloves of garlic
2 TBSP dried Italian seasoning
1 tsp onion powder
1 bayleaf
Steps:
1) put slow cooker on high, add beef stock, pepperoncini peppers, onion, garlic, onion powder, Italian seasoning and bay leaf. Mix.
2) cut beef evenly in 6 inch chunks, season with salt and pepper.
3) add olive oil to skillet, when hot add beef and sear on all sides 2-3 minutes. Remove from pan and add to slow cooker along with juices. Get beef into single layer.
4) turn slow cooker to low, cook 6 hours
Here is what I have never done
5) remove lid, turn slow cooker to warm. Drain off cooking liquid into bowl. Remove oil/fat. Pour liquid through strainer. Add to sauté pan, bring to dinner, cook 4-5 minutes.
6) remove Italian beef from slow cooker, shred, put on platter, add pepperoncini and onions, top with cheese!
