~Chicken tenders/Scalloped potatoes/Green beans with bacon & Parmesan~
Chicken Tenders
~Ingredients~
2 eggs
1 lemon
2 tbsp olive oil
Handful of chopped up Parsley
4 garlic cloves minced
¾ tsp creole seasoning
¼ tsp pepper
Package of chicken tenders
½ cup Italian bread crumbs
1 cup panko breadcrumbs
½ tsp onion powder
½ tsp garlic powder
1 tsp paprika
¾ cup parmesan cheese
~Directions~
In a large bowl combine the eggs, oil, lemon, parsley, minced garlic, creole seasoning, and pepper.
Add your chicken tenders and allow to marinate for at least 30 minutes covered in the refrigerator
Scalloped potatoes
~Ingredients~
4 large potatoes peeled and sliced paper thin
6 tbsp butter
1 tsp minced garlic
3-4 tbsp flour
1 ½ cups milk
Salt and pepper
4 ounces of Colby cheese shredded
~Directions~
Preheat your oven to 400 degrees
Slice your potatoes into paper thin slices and set to the side, they might change color while they are out, but that is okay they are still good to eat
For the sauce you are going to want to grab a small pot and add your butter and melt on a low heat continuing to stir with a wisk. Do not walk away because you do not want your butter to burn, then you will have to start over again. Have patience, everything will come together
Once your butter is melted, add your minced garlic and cook for about 30 seconds
Add your flour, your mixture may get clumpy and that is okay.
Once your flour and butter is combined well, add in your milk and continue to stir. You can raise the temperature to a medium high heat and continue to stir. The extra heat will allow your sauce to thicken. This may take about 3-5 minutes. Turn off the heat
Once you see your sauce thicken add in about a handful of your shredded Colby cheese, and continue to stir until it is melted.
Grab a 9 inch greased baking dish, and add one layer of potatoes, season it with salt and pepper, and add your melted cheese. Continue to do this until you run out of ingredients. Top it off with the shredded Colby cheese.
Bake it in the oven at 400 degrees for about 45 minutes or until your potatoes are cooked through
Chicken Tenders breading
~Directions~
Combine your Italian breadcrumbs, panko breadcrumbs, onion powder, garlic powder, paprika, and shredded parmesan to a bowl and mix well.
Take your chicken tenders and coat them with the breadcrumb mixture and line them on a greased baking sheet.
You are going to bake these in the oven at 400 degrees for 15 minutes. Then you are going to flip the tenders and cook for another 15 minutes or until fully cooked through.
Green beans with bacon
~Ingredients~
6 slices of bacon diced
1 bag of fresh green beans
1 tsp minced garlic
¼ cup grated parmesean
~Directions~
Cook your bacon, once it is done remove it from the pan and set aside. Do not drain the grease
Add your green beans to the pan with the bacon grease and cook on medium heat for about 5-7 miuntes. You are going to want the green beans to blister.
Add in your minced garlic and bacon and cook for about 30 seconds. Turn off the heat and top it with the shredded parmesan cheese.
