How about some Spanish easy and quick to make comfort food?… This vegan sausage with potatoes and onions in white wine sauce is a perfect meal for a quick and easy dinner!

INGREDIENTS:

700g of vegan sausages, sliced (recipe below)
2 medium potatoes, cubbed
1 onion, sliced
3 or 4 cloves of garlic, whole
2 bay leaves
Approximately 300 ml of water or vegetable broth
200 ml of dry white wine
olive oil
Salt
black pepper
1 teaspoon cornstarch

METHOD:

Shallow fry or grill the vegan sausages, reserve.
Add olive oil to a skillet and fry the potatoes until golden. Reserve.
Add the vegetable bouillon, the water and the cornstarch to a glass, mix to combine, Reserve.
Heat a skillet to medium heat, add olive oil and add the sliced onions. Let them sautรฉ for 3 minutes then add the bay leaves and the garlic. Sautรฉ until onions are golden brown. Add the white wine, the potatoes, salt and pepper and the vegetable cornstarch slurry. Stir for 3 minutes. Turn off the heat and serve it!
