We love a hearty neatball (vegetarian meatball) that is satisfying and tasty, but still healthy – and we have the perfect storm with this vegetarian lentil neatball marinara dish. It is also really fun and easy to make and can be served with some bread to mop up the sauces, or just a green salad on the side.
You’ll need:
โข 1 pack of The Spice Tailor Delhi Black Lentil Daal (lentils included)
โข 1 3/4 tbsp. vegetable oil
โข ยฝ small onion, finely diced
โข 1 large clove garlic, finely chopped
โข 1 1/2 tsp. plus 1 tsp. red or white wine vinegar
โข 1/8th tsp. salt and pepper plus extra to taste
โข 70-80g dried breadcrumbs
โข 400g marinara or pasta sauce (we buy a garlic and onion one)
โข 6 basil leaves, shredded, optional
โข Chilli flakes, optional
โข Handful of grated parmesan to serve
