A young passionate chef who studied and started his cooking career here in Italy from exclusive hotels to michelin starred restaurants and last year he managed to get inside and be one of the finalists in a cooking competition in Italy by michelin starred Chef Antonino Cannavaciuolo called Antonino Chef Academy. Today Yvone will show us how to cook a traditional risotto from Milan called risotto con ossobucco alla milanese (braised veal with saffron risotto). Saffron Risotto With Veal Shanks Recipe

2 veal cut of ossobuco

Sage & Rosemary & Garlic

1 cup Italian soffritto veggies (carrot, celery, and onion)

2-3 tbsp of Wheat flour

1/2 cup White wine

1/2 cup Tomato puree/passata

1 knob of butter

Extravirgin Olive Oil

Chopped Parsley

Salt and black pepper

RISOTTO:

150g Carnaroli rice

2 knobs of Butter

50g grated Parmesan

1/2 cup white Wine

300g veg Broth

half Onion (grated)

a pinch of saffron
