Orzo Bean Spinach Soup is a sumptuous & filling soup with goodness of orzo, rajma beans and spinach! Flavoured with Italian herbs and spices, this soup is a great addition to your soup menu! Vindhya Karwa of @vinsplate shows you this easy yet delicious soup that can be had both hot as well as cold! Recipe by –
INGREDIENTS –
1 cup cooked orzo pasta
1/2 cup of rajma
2 cups of mixed chopped red yellow bell pepper chopped into big pieces
1 cup of onion chopped length wise
2 to 3 cloves garlic grated
1 cup zucchini chopped into big pieces
1 cup carrot diced
Small bunch of spinach leaves
1/2 cup of tomato purΓ©e
8-10 cherry tomatoes
1 tbsp of celery chopped
1 tbsp of Thyme
2 tbsp of chopped chives
2 glasses of water
Salt and pepper to taste
Lime juice
METHOD –
1.) Heat the oil in a pan. Put the garlic, celery, onion carrots, bell peppers, zucchini.
2.) when they are little soft, add the rajma, orzo, spinach, chives, cherry tomatoes, tomato purΓ©e, water. Add the thyme and chives
3.) season them with salt and pepper. Add the lime.
4) Serve hot with sourdough bread.
