Yep…I am still in a No/Low Spend Budget Cycle. If you are on a tight budget or looking for some pantry cooking/ challenge or budget meal ideas then come along and cook with me.

So, today I’ll be sharing 2 super easy to follow recipes. Both recipes are great if you are looking to use up items from your pantry, refrigerator or freezer. The first recipe is a Gumbo that I made using items that have been buried deep in my freezer and the other recipe is a delicious Dirty Rice that is super simple and you can make it at any time even on a super busy week night.

RECIPES

OVEN ROUX
1 1/2 cups flour
1 1/2 cups of canola oil
Whisk together the oil and flour in oven safe skillet or pot (preferably a cast iron skillet) 
Bake for two hours @ 350 degrees, Stir roux after removing the pan.
If the color is lighter than you’d like you can increase temperature to 400 degrees, and bake for up to an additional 30 minutes or until desired color is achieved

GUMBO
1/4 Cup Oil (I used bacon fat)
3/4 Cup Roux1-2 LB Chicken Breast/Thigh (or any part of the chicken)
2-3 Sausage Links Cut Up ( I used  Smoked & Andouille)
6 Cups Broth (or Water)
1/4 Cup Tomato Paste1/3 Cup Onions  Diced
1/3 Cup Bell Peppers Diced1/3 Cup Celery Diced
1 Shrimp Bouillon Block (or 1 Tsp) Optional
 .05 oz  Dried Shrimp (Optional)
1 Tbsp Thyme (or 4 Whole Thyme Stems)
1 Cup Okra (fresh or frozen)
1 Tbsp Paprika (I used Smoked) Optional
1 Tbsp Complete Seasoning2 Bay Leaves
1Tbsp Cayenne (Optional)
3 Tbsp Garlic (or 6 Garlic Cloves) (or 1 Tbsp Garlic Powder)  
1 Cup Beer (Optional)
1 Cup Shrimp (Optional)2 Cluster Crab or 1 Cup Crab Meat (Optional) 

DIRTY RICE
1/4 Cup Water (broth)
4 Cups Cooked Rice
1 Tsp Chicken Bouillon (any bouillon is fine but omit if you have broth)
1 Cup Sausage (any loose packaged)
1 Tbsp Garlic (or 2 Garlic Cloves) (or 1 Tsp Garlic Powder)
1/2 Onion (Diced)1/2 Tsp Italian Seasoning
1 Tsp Paprika
1 Tsp Complete Seasoning or Chicken Bouillon Cube
1 Tsp Cayenne
1 Tsp Cumin1 Tsp Dried Thyme
1Tbs Worcestershire Sauce
