800 g of turkey
500 g of potatoes
50 g of dried mushrooms (è più facile se si può fare anche con funghi normali)

1 onion

Red Wine

Method
Mince the onion, the carrot, and the parsley. Fry lightly the mixture in a thread of oil.
Dip the pieces of turkey in flour and brown them in the pan with the mixture (brown for 3 minutes in each side of the turkey)
Pour a little bit of red wine and cook on high heat until the wine evaporates.
Add water (enough to cover the turkey) and cook it on low heat for 15 minutes (keep the pot covered and mix it from time to time)
lightly brown the mushrooms (previously soaked in hot water) in a pan with a drizzle of oil
After 15 minutes. Add salt and chopped potatoes to the stew
Cook on low heat for other 15 minutes. After that, add the mushrooms
If the stew results dry, add some water. Conversely, if the stew is too watery, cook for a little bit more on high heat without cover
