Moms stew:
3lbs of cubed stew meat
2lbs of potatoes cut in cubes
I bag of carrot sticks
2 cups of fresh green beans roughly chopped
2 can of tomato paste
3 gloves of finely cut garlic
1/3 cup of parmesan cheese
4 tblsp of olive oil
Salt and pepper to taste
1. Bring olive oil up to medium heat in a large sauce pot. Add garlic and saute for two to three minutes. Add meat and season well with salt and pepper. Cook until all pieces are slightly brown on the edges.
2. Cover with water and let simmer on med/low for one hour stirring every 15 minutes.
3. Add carrots and green beans and let simmer another 30 minutes.
4. Add tomato paste, cheese, and potatoes and let simmer for another 30 minutes.
