Cucuzza Longa
Ingredients:
Seasoned Lamb Shank (Rosemary/salt/pepper/oregano
1 Cucuzza Longa
3 (28oz) Cans of whole peeled tomatoes
2 Cups onion
2 Cups carrots
2 Cups potatoes
1 Cup of red wine
Garlic cloves
Heat olive oil in a pot
Braise the seasoned lamb
Once browned remove from the pot and set aside
Brown the garlic in the pot and add onions
Once the onions have softened add the lamb back to the pot
Put the tomatoes in a blender to break them down and then add to the pot
Add the wine and the rest of the vegetables except the cucuzza
Salt and pepper
Cook for about an 45 minutes to an hour + lamb should be getting tender
Then add the cucuzza
Cook for about another hour
To prepare the cucuzza:
Trim the ends off the cucuzza and cut in half so it easier to handle
Peel the cucuzza with a potato peeler then slice in half, length wise
Run a spoon down the middle to remove the seeds
Then chop in medium size pieces
