Recipe Penne with roasted capsicum

Preparation time : 1.5 h
Ingredients:
6 large capsicums
60g pancetta
bunch of parsley
olive oil
penne pasta
Step 1
Clean and bake capsicum, remove all seeds and white parts from the middle, drizzle with olive oil and bake 180 forcet fan for around 30 min. When is ready cover with aluminum foil and leave to cool down.
Step 2
Remove all skin from capsicums and chop it finely. Chop rest of the ingredients
( parsley and pancetta)
Step 3
Fry pancetta until become crispy and then put choped capsicum, add 300 mlm of water and cover, cook for next 30 min.
Step 4
Cook pasta, then mix together with sauce and pasta water, add some olive oil and parsley, season well. Serve with freshly grated black pepper. Enjoy 🙂
