Pesto Chicken:

– Ingredients:
– 4 chicken breasts
– 2 cups Freshly made Green Pesto
– 50 ml Olive oil
– 100 grans Mozzarella Cheese
– 20 Cherry tomatoes
– 2 big Tomatoes
– 3 tbsp Breadcrumbs
– 2 tbsp Italian seasoning
– Garlic Salt and pepper to taste
– 1 cup Basil leaves
– 2 Garlic bulbs

Cooking Procedure:

– Clean the chicken Breasts
– Make some gashes on chicken so the spices will be absorbed by chicken
– Slice 2 big tomatoes into thin slices
– Marinate chicken with garlic salt, pepper, olive oil, 1 tbsp Italian seasoning and half a cup pesto.
– Always make fresh pesto (I will post how to make pesto in a separate video later)
– Preheat the ovan to 180 degrees
– Meanwhile, add some oil to a pan to fry the chicken for 3 mins on each side on medium heat
– Put them on an ovan tray
– Spread pesto, sliced tomatoes, olive oil, garlic bulbs and bake the chicken for 10 mins
– Now, take the tray out and put cherry tomatoes and bake for 5 mins.
– Now, take the tray out and put mozzarella cheese, fresh basil leaves, breadcrumbs and more olive oil and bake for 10 more mins.
– Take out and serve sizzling hot
