simple but atas ingredients.
Ingredients for 2 persons:
Spaghetti – Rough surface (200g)
Water
Salt (for Pasta water)
Guanciale (120g) – it’s actually aged pork cheek
Pecorino cheese (100g)
Eggs x 2
Black Pepper (freshly granted better)

– no oil no cream (actually no salt also can ah)
– proportion = 1 person : 1 egg : 100g cheese (can add an extra egg yolk if u want more creamier)
– if u cant find atas guanciale, pork belly also can. but u need the fatty stuff for the oil
– low fire for cooking pork until lightly brown for abit of crisp
– rough pasta surface catches sauce well
– cook pasta to al dente (almost cook but still firm) coz u dont wanna over cook it
– off fire before you add pasta onto pan
– add 1 ladle (or abit more) to the egg / cheese mix
– actually i could have whisk the mixture abit more
– low fire before u add egg/cheese mix
– add abit of pasta water before adding the egg / cheese mix
– pasta water contains starch so dont just use hot water
– freshly grated black pepper then got the kick
