Christmas is just around the corner in this crazy and difficult year we all had to deal with. I hope all of us will find some peace for our souls and mind during these next week. And maybe this year we will avoid expensive gifts, but decide to make small little gifts from the bottom of our hearts. This Christmas cookie box was imagined as a lovely gift you can make and send to your friends or family.

The recipe is really simple, but one dough for 8 types of cookies. Yes, with just one dough you can make 8 types of absolutely delicious cookies.
So, take your time and make these amazing cookies for yourself, your family, or your friends!

One dough for 8 types of cookies:

Vanilla Cookie with Chocolate and Fleur de Sel
Matcha Cookie with White Chocolate
Chai Masala Cookie
Chocolate Chip Cookie
Chocolate Pretzel
Christmas Trees with White Chocolate
Peanut Butter Stars
Chocoman with Coconut Flakes

Ingredients:

Cookie dough:

butter 200g. (take it out of the fridge just 10 minutes before use)
sugar 125g.
a pinch of salt
vanilla extract half teaspoon
all-purpose flour 285g.
cocoa powder 15g.
3 egg yolks (medium size)

Optional:
*if you want to add different flavors, use the following ingredients, otherwise, you can just keep the cookies in 2 flavors: vanilla and cocoa

matcha powder 5g.
cornstarch 5g.
masala chai (allspice) powder or cinnamon 5g.
a handful of chocolate chips
dark chocolate 100g. (melted)
white chocolate (melted)
coconut flakes 3 teaspoons
different decorations
fleur de sel (or sea salt) 1 teaspoon
peanut butter 2-3 teaspoons

Instructions:

1.In a stand mixer or large bowl, mix the butter with sugar, a pinch of salt, and vanilla extract. Take the butter out of the fridge just 10 minutes before use. Mix all the ingredients until well combined, for a few minutes. Don’t overmix.
2. Add the egg yolks and combine.
3. Gradually, add the flour and mix until you get a nonsticky dough. Again, don’t overmix!
4. Divide the dough into two equal parts. And add combine the cocoa powder with one of the parts. Knead until combined and wrap with plastic film then let to rest in the fridge for 2 hours.
5. If you want different flavors, divide the dough into 4 equal parts.
6. Combine the flavor (matcha, corn starch, masala chai, and chocolate chips) with each of the dough. Don’t over knead. Wrap each dough with plastic wrap and let to rest in the fridge for 2 hours.
7. Once the doughs are ready, roll them out and create different shapes (use your imagination and the tools you have at home). The perfect thickness of the dough is about 5mm.
8. Bake the cookies in the preheated oven at 175°C for 10 minutes. IMPORTANT: Don’t move the cookies from the parchment paper until they are completely cool.
9. Once ready, choose to cover some of the cookies with melted dark chocolate and some with white chocolate.
10. Use the fleur de sel, coconut flakes, peanut butter, and different chocolate decorations to create various cookies.

The best of this recipe is that it leaves you multiple alternatives to create delicious cookies. You can use walnuts, pistachio, dried fruits, or jam to enrich the cookies.
