Recipe:
Boil diced squash with salt
Put chopped onion in the extravirgin olive oil and gently fry
Cook until onion became transparent
add rice (Italian Carnaroli or Arborio rice)
toast the rice for 1 minute
deglaze with white wine and
mix until wine completely evaporated.
Add a ladle of the squash cooking water,
and continue adding from time to time
waiting that rice absorb one ladle, before
that add the next one.
(This is the typical Risotto cooking way!)
now, add also the cooked squash
continue mixing until rice is cooked
add a piece of butter to make it more creamy
Squash risotto is ready!
Put in a large serving dish
then, in a single plate complete with
a sprinkle of Parmesan!
