Recipe for homemade pasta for 3-4 people:
For the dough you need:
200 gr. flour
2 eggs (1 egg for 100 gr. flour)
half teaspoon of salt
To make the dough I advice a mixer with blade tool.
Put inside all ingredients and activate for seconds, step by step.
Eventually you can add 1 or 2 tablespoon of water
if eggs are small sized. Very soon begin to form a ball of dough
on the side of the tool.
At that point it’s ready! Put the dough’s ball in a trasparent film
and put in the fridge for half an hour.
After this time take the dough and work it in the pasta machine
like in the video.
With 3 steps reduce the thickness of the
dough up to 1.5 – 2 mm. Then pass the tool to cut
fettuccine (if your machine has it).

If you don’t have the Pasta Machine… you can make the fettuccine the same!
You can work the dough by hand on a wooden or steel
work surface with a rolling pin.
Be patient, it’s quite tiring to reach the right thickness of 1.5 – 2 mm.

Cutting technique
Take a piece of flattened dough, already of the right thickness,
and roll it up. Then cut in slices (about 6-7 mm width) with a sharp knife.
Once disheveled with your hands these
sliced rolls turn into fettuccine ready to cook!
Make sure you get 25-30 cm long fettuccine.

fettuccine by hand.
