Delicious home cooked meal, chicken breasts, breaded with seasoned flour, shallow fried to perfection and simmered with baby bellas (baby portobello mushrooms) in a finger licking buttery Sherry wine sauce. My store was out of marsala wine, so sherry cooking wine is a good substitute
Ingredients
5 chicken breasts, skinless , lightly pounded and flattened
sherry cooking wine or Marsala wine 1/2 cup
chicken stock 1 + 1/2 cup
1 small shallot , finely chopped
5-7 whole garlic cloves, mince 5 and leave 2 whole
1 pkt sliced baby portobello mushrooms
1 cup all purpose flour
some olive oil and butter
dry seasonings : salt & pepper , paprika , Italian seasoning
Method
season the APF with the dry seasonings
In a wide pan add some olive oil +butter, throw in 2 small whole garlic cloves
Coat the chicken breasts with seasoned APF, both sides and shallow fry in olive oil + butter ,each side for 2.5 mins to 3 mins , nice and golden brown
set aside on a plate
wipe clean the pan and in the same pan add some olive oil and butter, to this add chopped shallot and minced garlic
saute for a min, add some salt, stir, and add the mushrooms
saute for a min, next add 1/2 cup sherry cooking wine, stir, then add 1/2 c chicken stock
check for salt, to your taste
Add the chicken to this sauce and simmer for 10 mins
serve with salad and or choice of bread, garlic bread
