Italian grissini are crispy and aromatic breadsticks from Turin. They are among the most renowned Italian gastronomic products in the world. Breadsticks are said to have been invented in Turin in the first half of the 1600s: they got their name from “gherssa”, a typical Piedmontese bread with an elongated shape similar to a French baguette.

Grissini can be used as an alternative to bread and as a snack.
They go well with hummus, any kind of pâté, honey, jams, perfect for any wine!
Experiment with additives, fill the sticks with any seeds, herbs, seeds and even cheese, of your taste and imagination!
You can also use different types of flour to make grissini even more healthy!
Ingredients for Lievito Madre starter 50% hydration:
200 g active starter culture
100 ml. water
30 ml extra virgin olive oil
5 g salt
Optional: 1-2 tbsp. poppy seeds, 1-2 tablespoons dried rosemary, 1-2 tablespoons sesame seeds., you can add grated parmesan cheese.
150 g wheat flour (in my recipe I use a mixture of flour: 100 g wheat, 20 g whole wheat flour, 30 g semol)
Proportions of ingredients for the starter culture 100% hydration:
200 g active starter culture
120 g wheat flour
5 g salt
10-20 ml. extra virgin olive oil
Optional: 1-2 tbsp. poppy seeds, 1-2 tbsp. l. dried rosemary, 1-2 tablespoons sesame seeds., you can add grated parmesan cheese.
