The Carbonara

This video is dedicated to my middle child because when she was just 4 years old, she hounded me to teach her how to cook carbonara. Iโ€™m laughing as I write this because it brings back fond memories… There wasnโ€™t a country where we went holidaying where she did not ask to eat carbonara… So therein began my quest to write a recipe simple enough to teach a 4 year old kid.

Itโ€™s not that we donโ€™t have a (good) recipe to teach her, in fact we cook carbonara at home every two weeks! But I wanted something which says like โ€œSarahโ€™s Carbonara Fourโ€, for me to remember she asked for it at 4 years old, and the criteria is that it must be delicious and easy enough to teach her.
I think I nailed it when she said : โ€œItโ€™s not delicious…… (pause)…. itโ€™s AWESOME!!โ€ ๐Ÿฅณ๐Ÿ˜…

So finally, three years later, I have it!

Albeit late, but better late than never! Especially since itโ€™s awesome with just four main ingredients…!

Eggs
Parmesan Cheese
Pancetta/ Bacon
Butter

This is authentically Italian, with no cream and no chicken stock! And remember to keep the fire at itโ€™s lowest once eggs go in, and switch the heat off after you stop stirring else it may become scrambled eggs! ๐Ÿ˜

Sarahโ€™s Carbonara Four

Recipe: Serves 2

4 Main Ingredients:
EGGS: 2 whole + 1 yolk
PARMESAN CHEESE: 60-80g
PANCETTA/ FATTY BACON*: 150g chopped
BUTTER: Salted, 15 g

Keto low carb Pasta**:
1.5 – 2 pack oat fiber fettuccine
1 tsp salt

Other ingredients:
1 tbsp oil
1 clove garlic
Truffle oil/ paste
Black pepper to garnish

*Pancetta is hard to find in Singapore so I replaced with the โ€œbacon bitsโ€ product in my video which is available in major super markets.
