I recently got a pressure cooker and I am so happy with it. I love cooking large meals in the cooker and I highly recommend anyone thinking of getting one to grab one up! (maybe on black friday)

🥩Beef Ranch Beef Stew
Makes 10 servings , 1 serving is 1 1/3 cup for 9 points
what all you need:
– 36oz beef chuck tender roast
– 1 1/2 pounds potatoes
– 32 oz canned broth
– 2 enevolpes lipton beefy onion soup mix
– 28 gm ranch seasoning mix
– 1/2 white onion
– 4 long carrots
– 1 tbsp corn starch
– 1 cup water

how to make:
step 1 – wash and cut your vegetables into dice size small pieces
spray the pot with olive oil spray, add the beef and sautee for 10 minutes

step 2 – after beef has finished sauteeing add your vegetables, beef broth,
and seasoning mixes. Pressure cook for 40 minutes, once stew is done top with minced
onion for a crunch and serve hot

🍅Italian Chicken
Makes 5 servings and 1 serving is 1 point
what all you need:
– 5 chicken breast
– 1 tbsp capers
– 1 cup sun dried tomatoes not in oil
– 5 whole garlic cloves
– 2 oz fat free mozzerella shredded cheese
– 1 cup great value organic roasted garlic pasta sauce
– 14.5 oz can petite diced tomatoes
– to your taste preference garlic powder, minced onion, sea salt
red pepper chili flakes, italian dry seasoning

how to make:
step 1 – add all ingridents minus the shredded cheese into the cooker, mix together,
cook for 20 minutes, then last add the cheese then place the lid back on for
additional 3-4 minutes so the cheese melts

served with frozen peas and carrots

🍲Minestrone Soup
Makes 15 servings , 1 1/2 cup is one serving for 1 point
what all you need:
– 2 tsp olive oil
– 5 garlic cloves, chopped
– 6 celery stalks, chopped
– 2 cups carrots, chopped
– 1 whole white onion, chopped
– 1 frozen bang of corn
– 15.5 oz can of white cannellini beans
– 15.5 oz can og garbanzo beans
– 15.5 oz can of dark red kidney beans
– 32 oz container chicken broth
– 14.5 oz canned chicken broth
– 14.5 oz canned diced tomaotes
– 28 oz can crushed tomatoes
– 1/2 cup uncooked orzo pasta
– one bay leaf
– minced onion, italian dry seasoning, garlic powder, red pepper chili flakes
and sea salt

how to make:
step 1 – Cut your vegetables, rinse and drain your beans.
step 2 – add olive oil into pot, seasonings, and add vegetables then sautee for 8 minutes.
step 3 – next add your broth, corn, beans and mix together, cook for 35 minutes

🧀 serve with shredded parm cheese
