Meatball Ingredients:
500g beef mince 17% fat
200g pork mince 23% fat
2 eggs
Fresh Herbs
– fresh parsley
– fresh basil
1 onion
3 cloves of garlic, crushed
good amount of grated fresh Parmesan cheese
100g bread crumbs
salt and pepper (to taste)
Tomato Sauce Ingredients:
4 cloves of garlic
Fresh Basil
Olive Oil
Salt and Pepper
1-2tbs VODKA
Parmesan Cheese, grated
Method:
Finely chop an onion. Place in bowl followed by meat, garlic, eggs, breadcrumbs, parsley and basil. Season with Salt and Pepper. Go in there with your hands and give it a proper mix. This takes around 2 minutes. Cover with clingfilm and put in the fridge to wait for the next steps.
Start preparing your tomato sauce by first blending your san marzano tomatoes in a blender. Slice your garlic VERY thinly. Splash good amount of olive oil in a cold pan followed by thinly sliced garlic, olive oil, and fresh basil. Pan on low heat and let it warm up slowly. After about 5 minutes stir in the blended tomato mixture. Give it a mix. Add salt and pepper. Then add some of that vodka!
Start forming your meatballs and when everything is ready cook your balls in a pan or an oven. After few minutes when your balls have got that nice crust put the pan in low heat and cover with lid. After 13-14 minutes cut one meatball in half and check the doneness. Take the meatballs off the heat and put the sauce back in. Add some of that fresh parmesan and give it a good mix. Now taste your sauce and season as needed.
Take your meatballs and add in the tomato sauce. Let it simmer and start preparing your spaghetti. Generous amount of salt in the water followed by pasta. Cook until Al Dente. Drain the spaghetti.
Now it’s time to plate. Take the spaghetti first. Throw in some of that sauce and give it a mix. Now add few meatballs, more sauce, freshly grated parmesan and fresh basil on top.
