New Orleans and her wonderful cuisine was blessed with the many Italian immigrants who haled primarily from Sicily. New Orleans actually had more Italy born Italians than any other city. These immigrants brought with them their traditions, especially the simple tomato sauce know as Red Gravy. We know it as Creole Sauce or Red Gravy. It is typically served with pasta, meats, baked chicken, pann`ed eggplant, or seafood. My Mom made a special Red Gravy and eggs during lent. I’ll share that recipe later. We were taught that a Creole Sauce was made with a roux whereas a spaghetti sauce was not. No matter how you serve it, your guests will love you for it.
