Recipe
Makes: 4 servings

Stuff You Need
1/4 cup water
2 medium onions, sliced into half circles
6 Roma tomatoes, cubed
6 medium zucchinis, cut into half moons
1 to 1 1/2 Tbsps dried oregano
2 Tbsps extra virgin olive oil
2 tsps Himalayan pink salt or salt of your choice
Your favorite plant-based parmesan cheese (optional; or see recipe for Parmesan Cheese on page…) for garnish.

Let’s Cook!
1. In a large pot, sauté onions in water until softened.
2. Add tomatoes, zucchinis, and salt.
3. Heat on high until vegetables become tender.
4. Add oregano and olive oil.
5. Top with plant-based parmesan cheese (optional) to garnish
