BOLOGNESE SAUCE
One of the most famous sauces in the world, it is a meat-based sauce in Italian cuisine, typical of the city of Bologna, itβs generally used to dress tagliatelle or other kind of eggs pasta (like pappardelle or fettuccine) or to prepare lasagne, to make this recipe you need a lot of patience, it takes around 2/3 hours to achieve the perfect texture but most of that cook time is hands-off.
Ingredients list: (for 4 persons)
400g (0,88lb) (14oz) ground beef
200g (0,44lb) (7oz) finely chopped pancetta (cured pork belly)
1 medium onion, chopped
1 celery stalk, chopped
1 small carrot, peeled, chopped
4 Tbsp. extra-virgin olive oil
60g (1/4 cup) (1/2 stick) butter
400ml (14,5 floz) tomato sauce
1/2 glass dry white wine
1/2 glass whole milk
finely grated Parmesan for serving
250g (0,55lb) dried tagliatelle, pappardelle or fettuccine
