This video is two parts. First, I show you how to make a versatile tomato-based sauce that can be used in any number of dishes. I like to make it, add a few of my “go to” spices, and jar it for use throughout the week. Then all you have to do is choose your ingredient (e.g. chicken, paneer, peas, chickpeas, egg) and throw it in to cook, pour in your sauce, done. You could also use that as a base for Italian cooking (I have not native Italian reference point for that, just my own opinion). But we use it most for Indian cooking as we have a lot of Indian influence.

The next part shows you how to take the sauce and use it for egg curry, showing the different spices and the technique I prefer to make it. The spouse loved it, by the way, so I’ll probably watch this in the future myself to remember what I did here.

Make a stash of this on the weekend, and you will have dinner covered most days of the week without any repeats. Just add the dish-specific spices the day of and voila, a new dish every night of the week.
