30-Day Cooking Challenge with Mina

With the ongoing extended quaratine in Metro Manila, I’ve been cooking more often at home. I would like to share easy to prepare, economical and healthy home-cooked meals with you. I hope you can try it, too.

This is a 15-minute pasta recipe.

Spaghetti Vongole

Ingredients:

400 grams spaghetti
4 tablespoons of extra virgin oil
4 garlic cloves, thinly sliced
3/4 cup white wine
1 kilo Manila clams
1/2 lemon, juiced
salt and pepper to taste
with chili flakes and/or parsley, serving suggestion

Procedure:

1. Cook pasta in boiling water for 8 minutes.

2. Heat the oil in a skillet over medium heat and sautee the garlic until golden brown.

3. Add clams and wine; increase heat to high and simmer until clams open.

4. Put the pasta to the pan and toss until the pasta is al dente and has soaked up the sauce.

5. Add the lemon juice; sprinkle with salt and pepper to taste.

6. Serve with chili flakes or parsley.

Yield: Serves 3-4 persons

Tips:
1. It’s easier to adjust the saltiness of the pasta dish at the end of cooking everything in the pan, instead of putting salt in the boiling pasta water.

2. A pack of frozen Manila clams from the grocery is more convenient to use since it’s already cleaned-up and has maintained its freshness.

3. You can add a little bit more wine for a sweet, tangy flavor.
